Sake Pairing
From an ancient era sake had been invented, people enjoy sake with food. This is one of big difference between sake and other alcohol beverage. Sake is made based on rice, water and koji(Japanese mold) and they are fermented by batch. It creates Sweetness, Saltiness, Sourness, Bitterness and Umami.
Here, we create special course for you that not only tasty but covered the presentation of history and culture of sake by sommelier. You will feel real Japan and real Japanese food culture with sake which consisted of regional and cultural aspects during 1,300 years of history.
We provide the service below:
1. 4 sake and 4 meals – these are collaborated with Japanese chef and Japanese sommelier.
2. Presentation of food paring – sommelier lecture the secret of food paring
3, Vessels – Sommelier serve sake in different vessels , which make surprisingly changed the sensation of aroma and palates
4, Hot & Cold Sake – when it comes to wine, it should maintain the temperature around 10-14 degrees. Sake could be raised temperature up to 55 degrees which increase the sensation of umami and alcohol.

Creating perfect paring, it is important to know the local culture and the magic of fermentation technique. Japan is one of “fermentation kingdom” due to their Koji culture.
Appetizer and main dish can be Japanese cuisine but also world ethnics depends what type of 地酒(Jizake) will be brought by sake sommelier. What an experiments!
Sake temperature should be dedicated to control for each foods. And beautiful Japanese potteries are pleasing our nose, tongue and eye.
